That moment when the worlds of sweet, savory, and spicy all collide together to create the BEST EVER Vegetarian Jalapeño Bacon Waffles! You heard right, friends. These waffles have bacon in them AND they’re vegetarian! Read on!
First of all, let’s discuss this magic bacon that allows us to create vegetarian waffles. I can honestly say I’ve never had such bacon-tasting non-bacon! You guys, it’s amazing. Allow me to introduce you to the savory, crunchy, and smoky Sweet Earth Benevolent Bacon. It’s a plant-based bacon smothered in a delicious hickory sage sauce and tastes heavenly!
Combined with the spicy flavor of these jalapeños, we have a win! To be honest, I’m not the type of person that loves spicy. I mean, I do like it, but I can’t handle a TON of spicy. If you’re a spicy food fanatic, be sure to keep some of the jalapeño seeds in the chopped jalapeños to take it up a notch! In this case, I completely removed the seeds. Lots of flavor, but only mildly spicy!

These Vegetarian Jalapeño Bacon Waffles are a variation of the Almond Flour Waffles recipe post!
Here’s the recipe:
- ¼ cup finely chopped jalapeño
- 3 slices Sweet Earth Benevolent Bacon
- 4 eggs
- ¼ cup unsweetened almond milk
- 1 tsp vanilla
- 2 Tbsp coconut oil
- 1¼ cup almond flour
- ¼ tsp baking soda
- 1 packet stevia
- pinch of salt
- Finely chop the jalapeño (using gloves). Set aside.
- Cook the bacon slices according to directions. Finely chop the bacon into small bits.
- Mix all of the ingredients together in a mixing bowl and preheat your waffle maker.
- Cooke each set of waffles for a few minutes. Top with syrup (optional), serve, and enjoy!
