Peanut Butter Chocolate Blender Donuts! Gluten-free and refined sugar free!

To start things off, I want to hear from my fellow donut addicts out there. Are you out there? Please say hi! I can’t even when it comes to donuts. My sweet grandpa (also known as Abuelito) introduced me to donuts when I was around the age of 5. I distinctly remember sitting at the dining room table taste testing them and washing them down with Dr. Pepper (which we were also taste testing). Soon after, my addiction grew into an uncontrollable problem! You think I’m kidding, but I could easily eat an entire box in one sitting.

Sadly not sadly, I still reeeaaaallllyyy love donuts. But I started this whole healthy living thing a few years ago and decided I should replace them with something a little less fried! And sugary, and all of those things. Along came the Healthy Baked Doughnuts recipe! (It seems that I can’t come to a decision on how I want to spell donuts LOL).

OH, and YES! These donuts can be made entirely in a blender! The. easiest. ever. Ok, well you DO need a donut pan. But other than that, just a blender!

I can’t decide if these Peanut Butter Chocolate Blender Donuts are breakfast or dessert!

Think sweet, melt-in-your-mouth, warm, chocolatey disastrous donut heaven. I’m not even mad about it! They’re actually a variation of the Blueberry Bread recipe, with peanut butter replacing the almond butter and (cough cough) chocolate chips (cough cough) replacing the blueberries. Ok but I don’t even feel bad because these chocolate chips are deliciously healthy! Also, you will need some sort of donut baking pan for these.

If you’re having an extreme chocolate craving (like I was when I made these), you can add a little bit of Tahini-Chocolate (from the Tahini-Chocolate Dipped Watermelon Wedges) on top as an optional icing! However, these Peanut Butter Chocolate Blender Donuts do have chocolate chips in them as well. 😉 It’s all about how strong your chocolate hankering is! Let’s get to baking, friends!

Serves: 6
Ingredients
  • ½ cup rolled oats
  • 1 tsp baking powder
  • Pinch of salt
  • 1 Tbsp ground flax seed
  • 1 Tbsp chia seeds
  • 2 eggs
  • ¼ cup creamy peanut butter
  • 1 medium banana
  • 1 tsp vanilla
  • ¼ cup chocolate chips
  • 7 dates
Instructions
  1. Preheat oven to 350 degrees.
  2. Remove seeds from the dates.
  3. Combine all ingredients except for the chocolate chips in a blender or food processor. Once the ingredients are blended together, hand mix the chocolate chips into the batter.
  4. Pour the batter into the donut pan and bake for approximately 25 minutes.
  5. Serve and enjoy!
