Because: summer, blackberries, coconut, BREAKFAST, and porridge! This Blackberry & Coconut Buckwheat Porridge recipe is a healthy breakfast treat!
You guys KNOW about my breakfast addiction. And my pizza and doughnut addiction. But let’s just focus on the breakfast addiction for now, shall we? The good thing about having a breakfast addiction is that it’s typically healthy food (well….ok…until I go all brunch crazy sometimes on the weekend…but thankfully we have Healthy French Toast for that nonsense). For the most part, breakfast consists of healthy breakfast bowls (<—-THE BEST! Check them out on Instagram), cereal with fruit, and overnight oats.
The only problem that I see is that it seems like I’m constantly eating breakfast food throughout the day. It’s the only thing I crave! Ok, that’s a lie, I crave ALL sorts of things, but I just seem to always want breakfast. Like, cereal every night before bed. I know, I KNOW! But you should totally be impressed, because I’ve weened Cody and myself off of Lucky Charms and now we’re being all healthy and stuff with organic, whole grain cereals. So then it’s ok, right? And NOW, there’s this awesome Blackberry & Coconut Buckwheat Porridge that we can go to!

Since it IS summer at the moment, I couldn’t think of a better breakfast combination than creamy coconut milk, sweet blackberries (which are totally in season right now!), and delicious porridge made out of rolled oats and buckwheat groats (this is my hands down favorite kind). So good, refreshing, and such a wholesome way to start the day!
Oh, and this recipe takes 10 minutes to make! HECK to the YES!

- ½ cup rolled oats
- ¼ cup buckwheat groats
- ¼ cup lite coconut milk
- 1 cup water
- 1 Tbsp maple syrup
- 2 cup blackberries
- Cook the rolled oats and buckwheat groats in water, bringing to a boil.
- Lower heat and add the coconut milk, cooking for about 7 minutes or until the groats have softened.
- Remove from heat and mix in the maple syrup.
- Top with blackberries and coconut shavings (optional). Enjoy!
