As you already know, I have quite the obsession with breakfast. Breakfast food is just so much fun! Especially when it’s quick, easy, healthy, and tastes like dessert like this Oatmeal Cookie Overnight Oats recipe!
Now that it’s almost summer here in Texas, I’m all about these overnight oats! While I love regular hot oats, I always like to mix it up with cold oat recipes around this time of year. And since this recipe tastes shockingly like a real oatmeal cookie (my favorite type of cookie, in case you were wondering), this recipe is just an all around win!

These oats have a great blend of protein and healthy carbs that are perfect for a delicious workout recovery.
Also, a note for my vegan friends: Replace the greek yogurt with coconut yogurt, and you’re good to go!
Personally, there’s nothing I enjoy more when it comes to food than a breakfast that tastes like dessert. I think part of this is because of my major sweet tooth problem and the fact that I pretty much grew up actually eating real desserts for breakfast, haha! Now that I’m a healthy eater, I enjoy making breakfast foods that taste like dessert but are still good for you (like the Strawberry & Cream Overnight Oats or Pumpkin Pie Overnight Oats)!
What are your favorite types of breakfast?
- ½ cup rolled oats
- 2 Tbsp almond butter
- 1 Tbsp cinnamon
- 1 packet stevia
- 2 tsp maple syrup
- ¼ cup nonfat plain greek yogurt
- ¼ cup unsweetened almond milk
- Combine all of the ingredients together and mix.
- To make the overnight oats thinner (more liquid), add ¼ cup more of unsweetened almond milk. To make them thicker, omit the almond milk completely.
- Place in jars and refrigerate overnight.
- In the morning, remove from refrigerator and enjoy!
