Crunchy, fresh, cold, and delicious. These 5 Favorite Spring Salad Ideas are perfect for easy lunches and dinners that the whole family will love!
So here’s a pregnancy shocker: I suddenly love salads. What?? I KNOW.
I think it’s the combination of the fact that I’m always burning up these days (thanks, second trimester) and that it’s actually getting warmer outside. And by warmer, I mean that here in Oklahoma we totally skipped spring and went straight to summer. I’m starting to sweat just thinking about it!
I mean, don’t get me wrong. I’ve liked salads before. But now? I LOVE salads. LOVE! It’s the craziest thing, ya’ll.
Gimme all the cold, crunchy, watery ingredients! And not just salads. Smoothies (omg yes to this easy Strawberry Banana Chia Seed Smoothie), watermelon….sooooo much watermelon. Obsessed!
But enough about me and my pregnancy body temperature probs. Let’s talk about these delicious spring salad ideas!
Here are my 5 favorite Spring Salad Ideas!
Egg & Avocado Salad
A match made in heaven! Fry an egg, boil it, scramble it. Combine it with fresh avocado (or see my tip below), some spring mix, and you’ve got yourself a hearty and delicious salad that’s basically the easiest EVER. Step up this salad by adding quinoa and tomatoes, like in this Poached Egg & Avocado Breakfast Salad!
Pro tip: Don’t feel like cutting up an avocado? These Wholly Guacamole packs are PERFECT as a salad topping!
Lemon & Lentil Salad
THIS. This combo, y’all! The perfect blend of hearty and wholesome. I’m really loving cooking lentils in advance, keeping a cold lemon balsamic dressing (like the one in the BEST Lemon Balsamic Lentil Salad recipe) in the fridge, and having the ingredients ready to put together!
Pro tip: Keep ready-to-eat lentils on hand to save time!
Protein-Loaded Taco Salad
Sometimes you just need a little more protein in your salad! Add ground turkey, avocado, tomatoes, corn, and a handful of tortilla chips to your lettuce for the perfect taco salad (RECIPE: Easy Healthy Taco Salad w/ Ground Turkey).
Pro tip: Any type of protein will work. Prep your protein in advance for a quick dinner salad idea!
Sweet & Savory Salad
Or in this case, sweet & savory & SPICY! I’m all about adding fruit that’s balanced with a savory and/or spicy element to mix things up. Like this delicious Chili Mango Zesty Quinoa Salad!
Pro tip: Buy pre-cut fruit at the store to really save time!
Sweet Potato & Black Bean Salad
There’s just something about combining sweet potatoes and savory black beans that just takes things to another level, y’all. Trust me on this one! Throw in some avocado (always, right?) and you’ve got yourself an amazing spring salad! (RECIPE: Roasted Sweet Potato Black Bean Salad)
Pro tip: I definitely like to buy pre-cubed sweet potatoes and cook them in advance. Purchasing organic canned black beans is also a great way to save time!
