A couple of summers ago, I signed up for a bootcamp class. It was wonderful and horrible at the same time.
The wonderful part was that I could knock out my workout in the morning, go through an INTENSE routine, burn a million calories, and felt super energized. The horrible part? Getting up at the awful hour of 4:30am to be there by 5am. HORROR!
I am literally the least morning person on the planet.
Ok, maybe not literally. But it’s to the point that people think I’m completely rude if they encounter me at any point within 1.5 hours AFTER I’ve had coffee. I won’t say a word. Don’t talk to me, don’t look at me. Let’s just sit in silence and wake up, please. No loud noises….thank you. Please hold all of your joy and excitement until after this coffee has set in.
I admit, it’s a little bit of a problem. I don’t mean to be rude, I really do love people. But it’s like there’s a cloud over my head until I’ve truly woken up! And it’s so much worse if I’m sore. Like…it’s BAD.
So back to the bootcamp story….I would wait until the last possible second to wake up and get ready in order to still make it on time. When I got home after the workout, I had to book it to get ready and get to work! Meaning that breakfast typically ended up being a sugary cereal that I could down really fast.
Until my roommate introduced me to overnight oats, of course! They ended up saving my life! Thank you, Pinterest, for showing my roommate how to make overnight oats so that she could show me how to make overnight oats.
And thank goodness, because these Pumpkin Pie Overnight Oats are the BEST!
I make them the night before in mason jars and then simply take them out of the fridge in the morning. They can also be topped with nuts, fruit (pomegranate seeds are SO good on them), or (as seen in the video) whipped cream. Just make sure that whipped cream is vegan if you want this recipe to stay vegan-friendly! I mean, would it really be pumpkin pie without whipped cream? Alright, maybe/maybe not on the whip cream (vote in the comments below), but these Pumpkin Pie Overnight Oats are a perfect blend of carbs and protein!
This Pumpkin Pie Overnight Oats recipe is one of my favorites. It tastes like everything fall and is SO easy to make! Basically pumpkin puree (I like using this canned pumpkin), almond milk, rolled oats, and sweetener of choice (stevia or maple syrup is a great option)! I also used this vegan vanilla protein powder for a little added protein.

Here’s how to make this Pumpkin Pie Overnight Oats recipe:
Pumpkin Pie Overnight Oats
Vegan, Vegetarian, Gluten-Free
- 1 Scoop Vegan Vanilla Protein Powder
- 1/3 Cup Pumpkin Puree
- 1/2 Cup Rolled Oats
- 1/3 Cup Unsweetened Almond Milk
- 1/2 tsp Pumpkin Pie Spice
- 1 Packet Stevia
- Combine the dry ingredients in a jar or a container with a lid.
- Add in the pumpkin puree and milk.
- Stir, then cover with a lid and leave in the refrigerator overnight.
- In the morning, open the container and enjoy!
