I seriously loved chocolate (I mean don’t get me wrong….I definitely still love it) and had a piece of dark chocolate for dessert every night. Ok, one of my desserts every night (if it’s healthy dessert does it count???)(no). But lately I’m just completely obsessed with fruit-based desserts and legit always crave them!
Don’t worry, friends. I won’t be giving up Healthy Chocolate Truffles or Healthy Chocolate Cake any time soon, but this Vegan Cranberry Ginger Crumble Fruit Bake is my jam right now!
This Vegan Cranberry Ginger Crumble Fruit Bake is basically the easiest baked dessert EVER.
Major lazy girl status over here. Feel free to read the recipe below, but I can give you the 3 step run down right now: 1.) Put fruit in a pan, 2.) add syrup and spices, 3.) top with granola and bake. DONE. We have a baked crumble-like healthy dessert that tastes like heaven JUST LIKE THAT!
I created this recipe for 2, but in reality it’s almost enough for 3….just depends on your portions. ALSO!!!! This dessert is pretty much also breakfast. Maybe it’s both? You choose! I personally think that’s a win, too!
Vegan Cranberry Ginger Crumble Fruit Bake
Vegan, Vegetarian, Gluten Free, Refined Sugar Free
- 1 apple
- 2 mandarin oranges
- 1 cup cranberries
- 3/4 cup blackberries
- 1 Tbsp water
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 2 Tbsp maple syrup
- 1/2 cup vegan granola
- 1/4 cup pomegranate arils
- dollop coconut yogurt ((optional))

Preheat oven to 350 degrees.

Slice apples, peel oranges, wash cranberries and blackberries.

Mix fruit together and place in a baking pan (I used a small loaf pan).

Top fruit with water, spices, and maple syrup. Sprinkle granola and pomegranate arils on top and bake for 12-15 minutes.

Serve warm with a dollop of coconut yogurt (optional)!
