
YUP, we’re going there. All the Christmas feels with these Gingerbread Oatmeal Pancakes, and it’s not even Thanksgiving yet! I mean, are you surprised though? Ok I’ll admit it, I might be jumping the gun with this little Christmas celebration here on the blog. But I promise I have my reasons! One being hello CHRISTMAS, people! Only the best holiday of all and it’s just around the corner. And second being that Boohoo (an amazing global online fashion retailer) sent me this lovely Christmas sweater that I’m currently obsessed with! Any Home Alone fans out there??? Oh, the memories. Things I love about these Gingerbread Oatmeal Pancakes: thick, fluffy, soft, wholesome, sweet. And gluten-free!
OH and you can literally throw all of the ingredients in to a blender. No hand mixing required! This recipe is perfect for the lazy girl efficient, to say the least! And healthy, of course.
Side note: I didn’t include nutrition for the pure maple syrup and light whipped cream used in this recipe. You can also try adding some fruit as an optional (and healthier) topping!

Gingerbread Oatmeal Pancakes
Vegetarian, Gluten-Free, Refined Sugar Free
Ingredients
- 1 1/2 cup rolled oats
- 3 eggs
- 1/3 cup plain greek yogurt
- 1 banana
- 1/4 cup unsweetened almond milk
- 1/2 tsp vanilla
- 1/2 Tbsp ground ginger
- 1/2 Tbsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
Instructions

Blend the rolled oats. Add in the liquid ingredients and continue to blend.

Add in the remaining ingredients and blend until the batter is even throughout.

Pour 1/4 cup of the batter into a hot pan and cook for about a minute on each side (or until browned).

Top with pure maple syrup and enjoy!
